The meat is sourced locally on free-range farms, and the fish that are serving, such as turbot, red mullet, octopus, and lobster, arrives directly from the morning's catch.

Trattoria sull'Albero Restaurant - Designed around a large spreading oak tree with rustic interiors that evoke an elegant, expansive treehouse, the Trattoria Sull'Albero offers a laid-back lounge and dining ambiance overlooking the fields and forests of the Valle Serena. The classic Tuscan menu of the 'farm to plate' fare showcases the organically cultivated ingredients sourced from the farm, freshly picked vegetables, artisanal cheeses, free-range eggs, in-house prosciutto ham, and zero-kilometer sourced meat. Guests can enjoy a delicious drink either inside the cozy fire or outside at the large wooden bar or in the shady courtyard that borders the freshwater infinity pool. "Sull’Albero Bar" - Drinks are served all day and night at the long outdoor wooden bar at the Trattoria Sull’Albero or its inside bar with relaxed fire-side seating. Borgo Santo Pietro’s cavernous cellar, situated below the thirteenth-century villa, plays host to nearly 1250 prestigious and boutique labels which line its walls. Years of 'walking the vineyards' and sampling various wines have guided us to build a wine list greatly inspired by Borgo’s commitment to authentic production. This is why you won't find many mainstream wines or winemakers on the list, as choosing what is loved and, most importantly, those that uphold the traditions, history, and culture of winemaking.
